Christmas Salad

“No Christmas spread is complete without a salad and this one is perfect. While this may not be a typical leafy green salad, it’s heavy on the veggies.”




500 grams butternut pumpkin

2 cups dried quinoa

4 cups water (quinoa)

4 vegetable stock cubes (quinoa)

10 cups water (peas)

5 vegetable stock cubes

500 grams frozen peas

200 grams frozen edamame

250 grams speck

⅓ cup dry white wine (speck)

⅓ cup olive oil

½ tablespoon cinnamon (ground)

½ tablespoon rosemary leaves (dried)

½ tablespoon chilli flakes

1 teaspoon himalayan rock salt

1 teaspoon cracked black pepper

1 ½ cups frozen mango pieces

⅓ cup moscato wine

The Great Australian Christmas Pudding

1 cup (240g) mixed glacé fruit

1/4 cup (60g) glacé cherries

1/4 cup (40g) sultanas

1/4 cup (60ml) brandy

4 large eggs, separated

1/2 cup (80g) icing sugar

1/4 cup (25g) cocoa powder

60 gram dark chocolate

1/3 cup (45g) roasted hazelnuts, chopped coarsely

45 gram chocolate honeycomb bar, chopped coarsely

2 teaspoon powdered gelatine

1 tablespoon hot water

1 cup (250ml) pouring cream

180 gram white chocolate

1/4 cup (35g) hazelnuts, extra, roughly chopped
